Preparation & Instructions
Blueberry Muffin Mix
- ½ cup milk
- 1 large egg, slightly beaten
- 8 Tbsp. unsalted butter, melted and cooled
Preheat oven to 400℉. Grease or line a 12-cup muffin tin with paper liners. Whisk together milk and egg in a medium bowl. Add muffin mix and melted butter and mix by hand with a spatula or wooden spoon. Divide batter evenly into muffin cups and smooth tops of each. Sprinkle sanding sugar evenly over each muffin. Bake for 15–18 minutes until golden brown and a toothpick inserted into the center of the muffin comes out clean. Cool in pan 5 minutes. Remove from pan and serve warm.
For bakery-style muffins: For a 6-cup muffin tin, bake at 400℉ for 20–25 minutes until golden brown and a toothpick inserted into the center of the muffin comes out clean.
